Job Summary

Leading a team of Stewards in this hands-on role in coordinating the back of house kitchen operations to facilitate the Chef team in delivering outstanding service. 

 

Key Duties and Responsibilities

  • Assist in the correct usage of all chemicals within the department and outlets, including appropriate training in accordance with Work Health and Safety standards
  • Ensuring that garbage & recycling removal is being done in a timely manner for the resort
  • To ensure the quality levels of products and services
  • To manage and lead the staff: training, motivating and structuring the team which will ensures a good working atmosphere        
  • To provide rigorous management: controlling raw material stocks, especially in terms of their cost
  • To co-ordinate the distribution of tasks amongst their teams ensuring that the work progresses as it should within the time available
  • Inspect equipment, work areas and general supplies to ensure conformance to establish health and safety standards
  • Ordering supplies for back of house needs, including but not limited to, chemicals, non food items, small wares, equipment etc.
  • Prepare and properly ensures cleanliness for lunch, dinner, for morning and afternoon function.
  • Supervise and coordinate activities in the kitchen operation
  • Collaborate with front of the house managers, including F&B director, Restaurant Managers, etc. 
  • Reports to Executive sous chef and communicates for daily planning VIPS, and special menu of the day
  • Maintains inventory of china, glass, silver, and other items essential to daily operation.
  • Maintain employee engagement and satisfaction
  • Ability to cover shifts when and where needed
  • Organize, interview, recruit and scout talent for their department
  • Oversight over international intern program, and seasonal staffing swings. Planning the onboarding of any international or temporary recruiting from start to finish including liaising with Human Resources
  • To implement the consistent delivery of superior customer service through the Customer Service Program. To ensure that the department creates a professional impression to customers and team members. To review and act upon customer feedback relevant to your areas of responsibility. This to include customer complaints and compliments.
  • All other duties as assigned by the Executive Chef and Executive Sous Chef

 

Skills, Experience & Educational Requirements

  • Must be dual-skilled as manager and steward
  • 2+ years experience in similar level of management
  • Familiarity with large hotel operation.
  • Knowledge of chemicals, data sheets, and health department regulations.
  • Significant previous experience of managing a team in a similar environment
  • The ability to manage a profit center: stock, cost prices, orders etc
  • The ability to manage a team: supervision, training, motivation, delegation
