Job Summary
The responsibilities of the Pastry Chef include preparing and presenting high-quality pastries, developing new dessert recipes, maintaining a high-quality inventory and ingredients, and ensuring compliance with food safety regulations. They will report to the Executive Chef and will work closely with kitchen colleagues to deliver the smooth operation of the pastry section, while guaranteeing customer satisfaction.
Key Duties & Responsibilities

Directs and oversees the pastry and baking functions of the kitchen(s), including developing menus, monitoring inventory, purchasing supplies, and controlling costs

Delivers a level of quality in the Pastry department that adheres to One&Only standards

Ensures that production is correctly executed, with products complying with technical sheets

Collaborates with Restaurant Managers and the culinary team to develop recipes for the menu, considering factors like the seasonal availability of ingredients, the likely number of customers, portion sizes, and final prices

Looks to market demand to establish new menu items

Maintains the budgeted target cost while providing the costing of new menu items

Being responsible for all pastry production, coordinates the distribution of tasks among their teams to ensure work progresses as it should within the time available

Implements the consistent delivery of superior customer service through the Customer Service Program

Ensures the department creates a professional impression to customers and colleagues

Checks customer satisfaction levels by exercising a presence in restaurants during mealtimes

Meets with customers after each service, receiving feedback while establishing relationships

Reviews and acts upon customer feedback relevant to their areas of responsibility, including customer compliments and complaints

Provides rigorous management: controlling raw material stocks, especially regarding their cost

Maintains the GSQ score and food costs

Monitoring stock levels to reduce waste

Reports to the Executive Chef and Executive Sous Chef, communicating about daily planning, VIPs, and special menu items of the day

Liaise with the savory team for daily needs

Manages staffing through seasons of high and low occupancy

Responsible for leading, developing, and mentoring a team of bakers to ensure a positive work environment

Takes on additional tasks as assigned by the Executive Chef and Executive Sous Chef
Skills, Experience, & Educational Requirements

2+ years’ experience in a similar role is required
-
Must be dual-skilled as a Manager and a Chef

Significant previous experience managing a team in a similar environment

Possesses cooking skills, including being able to adapt their cooking style to local environments

Experience in a luxury hotel setting is a plus

Food Handlers Certification Required

Physical Requirements
The ideal candidate must be able to perform all physical requirements of the job in a safe manner, with or without reasonable accommodation. Physical requirements include, but are not limited to:
- Standing, walking, stooping, kneeling, and bending in an operational environment for extended periods
- Frequent bending, twisting, stooping, reaching, and pulling
- Lifting and carrying of loads weighing up to 50 pounds
- Working in outdoor environments, including high altitudes, that may present extreme weather conditions such as snow, ice, rain, heat, wind, etc.
