Job Summary 

The Sous Chef will assist the Chef de Cuisine and Executive Sous Chef in managing culinary operations, including overseeing food preparation, leading culinary team, ensuring quality and consistency of dishes, and maintaining a clean and organized kitchen. The Sous Chef will also contribute to menu development, manage inventory, and ensure compliance with health and safety regulations.  

 

Key Duties and Responsibilities 

  • Responsible for daily service and brigade. Planning the department according to occupancy. Customer focus, display warm engaging and caring behavior to guests and team member 

  • React to customers’ needs with a sense of urgency. Responsible for planning of the kitchen roster

  • Manage the kitchen, food preparation, supplies ordering and kitchen staff for general food service and function

  • Prepare and properly presents food for lunch, dinner, for morning and afternoon function

  • Supervise and coordinate activities in the kitchen operation 

  • To ensure that production is correctly executed and that products comply with the technical sheets  

  • To ensure the quality levels of products and services are up to One&Only standards 

  • Responsible for leading, developing and mentoring a team of bakers to ensure a positive work environment          

  • To provide rigorous management: controlling raw material stocks, especially in terms of their cost

  • To prepare all the menus in coordination with the Restaurant Manager and check customer satisfaction levels by exercising a presence in the restaurant at meal times 

  • Reports to the Chef de Cuisine and communicates for daily planning VIPS, and special menu of the day

  • To maintain GSQ score and food cost 

  • Inspect equipment, work areas and general supplies to ensure conformance to establish health and safety standards 

  • Instruct to train other kitchen chefs in the preparation areas, cooking garnish and presentation 

  • Monitor and enforce sanitation practices to ensure that employees follow standards and regulation 

  • To be able to cover all restaurants and cuisines in absence of sous/chef de cuisines of that restaurant to ensure quality and integrity of menus is maintained 

  • To implement the consistent delivery of superior customer service through the Customer Service Program 

  • To ensure that the department creates a professional impression to customers and team members 

  • To review and act upon customer feedback relevant to your areas of responsibility. This to include customer complaints and compliments.  

  • Take on additional tasks provided by Executive Chef and Executive Sous Chef 

 

Skills, Experience & Educational Requirements 

  • Cooking skills: the ability to adapt your cooking style to your local environment  

  • The ability to manage a profit center: stock, cost prices, orders etc  

  • The ability to manage a team: supervision, training, motivation, delegation  

  • Must be dual-skilled as manager and chef  

  • Experience in Michelin environment a plus 

  • 2+ years experience in similar level of management 

  • Experience in luxury hotel setting encouraged
