About The Role 

Job is to oversee the inspection, repair, and preventive maintenance of kitchen, laundry, and restaurant equipment, as well as general facilities and MEP systems. The position ensures that all equipment and facilities are maintained in a safe, reliable, efficient, and operational condition in accordance with manufacturer recommendations, property standards, health and safety requirements, HACCP, and applicable regulations.The role provides technical supervision and support to the Facilities team, coordinates maintenance activities and work orders, monitors equipment performance, and works closely with Kitchen Operations and other departments to minimize equipment downtime and maintain uninterrupted property operations.

Key Duties and Responsibilities

  • Supervise and coordinate maintenance team, effectively managing resources to ensure all assigned tasks and work orders are completed safely, efficiently, and within the required timeframe. The position requires minimum 5 years of relevant facilities maintenance experience or an appropriate combination of education and practical work experience.
  • Ensure all maintenance activities are carried out safely and in full compliance with applicable health, safety, environmental, and property requirements, including the correct use of (PPE), safe work practices, risk assessments, and established safety procedures.
  • Promptly escalate significant technical, operational, safety, equipment, and maintenance-related issues to senior management, providing clear technical advice, recommended corrective actions, and updates on the status of ongoing issues.
  • Maintain all issued tools and equipment in good working condition and ensure that required inspections, testing, and calibration are kept up to date.
  • Develop and deliver technical training programs for the Facilities team in accordance with the approved monthly training calendar, ensuring relevant knowledge, skills, safety practices, and equipment procedures are effectively communicated.
  • Supervise and effectively manage the Planned Preventive Maintenance (PPM) program for all kitchen and laundry equipment, ensuring maintenance activities are completed as scheduled. Maintain accurate and up-to-date PPM records, ensuring all completed maintenance activities are properly documented followed by the ISO 22000 formatting process, verified, and signed off.
  • Maintain and update refrigeration system calibration records as per the scheduled internal and external calibration requirements, and verify that all calibration certificates received are valid, complete, and properly documented.
  • Maintain and update refrigeration equipment disinfection records according to the approved schedule, ensuring all required disinfection activities are completed, properly documented, and verified for compliance and audit purposes.
  • Ensure water filters and softeners are replaced for equipment according to the approved replacement schedule and manufacturer recommendations and maintain accurate replacement records and supporting documentation for audit and compliance purposes.
  • Maintain accurate PPM records and supporting documentation to ensure readiness for internal and external audits and compliance with ISO 22000, Earth Check, and HACCP requirements.
  • Ensure daily temperature readings for refrigeration systems are recorded and maintained accurately, and ensure SNG utility readings are recorded as required, with all records properly maintained for monitoring and audit purposes.
  • Conduct a monthly inventory check of essential maintenance spare parts, ensuring minimum stock levels are maintained to support timely corrective and preventive maintenance activities.
  • Monitor and record monthly Freon/refrigerant consumption in accordance with approved LPOs, ensuring usage is properly documented, reviewed, and maintained for operational and audit purposes.
  • Provide technical coordination and support for CAPEX and Culinary projects, ensuring proper planning, execution, coordination with stakeholders and contractors, and compliance with approved specifications, safety standards, and project requirements.
  • Conduct regular team meetings and briefings to understand operational needs, address concerns, communicate priorities, and ensure effective coordination and teamwork.
  • Ensure the safe and efficient operation of laundry boilers and associated equipment, with daily monitoring of boiler water quality parameters, accurate recording of readings, and verification to ensure compliance with required operating standards.
  • Ensure PPM schedules are followed and records maintained for kitchen hood suppression systems, SNG systems, and kitchen ventilation systems, ensuring all maintenance activities are completed safely and in accordance with manufacturer recommendations and property requirements.
  • Ensure all kitchen and laundry general maintenance requirements are addressed in a timely manner and maintain appropriate lighting and lux levels to support safe, efficient, and smooth operations.

About You 

  • Must have a Diploma / Degree in mechanical or electrical engineering with minimum five Years experience in large scale commercial kitchen, refrigeration, laundry equipment operations, repair and maintenance.
  • Strong diagnostic, troubleshooting, fault-finding, and rectification skills for electrical, mechanical, refrigeration, kitchen, and laundry equipment.
  • Sound knowledge and practical experience in Preventive Maintenance (PPM) and Reactive/Corrective Maintenance.
  • Ability to work effectively and make appropriate technical decisions under pressure and within operational deadlines.
  • Ability and willingness to work safely in restricted access, confined, or challenging work areas, as required.
  • Strong teamwork and communication skills, with a willingness to assist and support other team members and departments.
  • Ability to identify and promptly escalate technical, safety, and operational issues to the appropriate level of management.
  • Ability to train and guide maintenance staff on equipment operation, maintenance procedures, troubleshooting, and safe working practices.
  • Working knowledge of basic computer applications, Microsoft Office, and maintenance-related documentation systems.
  • Ability to independently manage and respond to technical requirements, breakdowns, and maintenance activities during all shifts, including morning, evening, and night operations.
