With stunning resorts located across the globe and exciting expansion planned, Kerzner International currently has a fantastic opportunity for an experienced Assistant Manager, Pool & Beach to join One&Only Royal Mirage Resort in Dubai.With the global growth of our brands, you will be an integral part of Resort’s success, and your role goes beyond developing potential relationships with our clients where you will be responsible for ensuring a seamless and exceptional experience for guests. Collaborating with the Restaurant Operations Manager, you will oversee daily operations, manage staff, and contribute to the achievement of financial and service goals.
Key Duties and Responsibilities
• Ensure all guests are warmly welcomed and attended to promptly upon arrival at the pool or beach – all colleagues in the team are to meet these requirements and are to ensure the training.
• Supervise daily operations of poolside and beach service areas, ensuring all shifts run efficiently and to the highest standards.
• To efficiently administrate and action the daily mail, guest report lists, staff roster, and other paperwork that is required to assist the head of department such as training reports, monthly sales report etc.
• Oversee the setup and cleanliness of cabanas, loungers, and service stations, ensuring aesthetics, hygiene, and safety at all times.
• Maintain strong coordination with culinary, housekeeping, and recreation teams to ensure smooth cross-functional operation.
• Conduct daily team briefings to communicate service expectations, VIP arrivals, weather impacts, and special events.
• Support departmental onboarding and training for all new hires and recently promoted team members.
• Guide the team in delivering high-quality food and beverage service in a dynamic, al fresco environment.
• Address and resolve guest concerns swiftly, professionally, and proactively.
• Monitor service consistency, portioning, and quality across all menu items, including beverages and light fare.
• Collaborate with the F&B Cost Controller to ensure accurate inventory tracking and conduct monthly stock takes.
• Assist in maintaining cost control by managing stock par levels, limiting waste, and optimizing staff scheduling.
• Responsible for keeping food and beverage costs below the set target.
• Work with the Marketing team to implement promotions, themed activations, and seasonal campaigns.
• Participate in developing strategies for enhancing guest engagement and service experience in the pool & beach areas.
• Providing coaching and feedback to waiters, and supervisors to ensure a culture of excellence.
• Uphold all health, safety, and hygiene standards in accordance with both internal SOPs and local regulations.
• Encourage a culture of continuous improvement and service innovation.
• Identify opportunities for guest delight and implement creative enhancements to the guest journey.
• Act as departmental trainer for pool & beach service and lead by example in all areas of guest interaction.
• Assist the Food & Beverage & Marketing Manager to promote and strategies the venue.
• Assist the management to prepare strategy for the outlet.
• Collaborate with the marketing to promote special events I.e. Valentine’s etc.
• Coaches and counsels captain waiters, bartenders, and waiters effectively.
• Act as a departmental trainer for their outlet.
• Suggest and implement initiative that will drive revenue and identify opportunities for savings.
• As the assistant of the manager, the Assistant Manager needs to be ready to represent in manager in her/his absence.
• Assists the Restaurant Operations manager on the daily operation as well with all financial deports, month end reports, FSMS and, HACCP.
Skills, Experience & Educational Requirements
• Must be very well groomed and presentable and be an inspiration to team members – always setting a good example.

• P&L financial awareness
• Focus on new world wide market trends
• Experience in restaurant and pool and beach control
• Knowledgeable on how to do Menu Engineering
• Creates bench marketable product standards
• Experience in managing food costs and inventory control
• Worked or interned in a leading luxury 5 star hotel for at least 2 years
