Job Summary

The Chef De Partie at the Meydan Hotel plays a crucial role in supporting the kitchen's daily operations by overseeing assigned section and ensuring the highest standards of food preparation and presentation. Responsible for delegating tasks to Demi Chefs and Commis Chefs, the Chef De Partie maintains efficient workflow and upholds hygiene and safety standards. This position requires strong leadership, attention to detail, and the ability to consistently deliver high-quality dishes while fostering a positive and collaborative work environment.

 

Key Duties And Responsibilities

  • Maintain the highest standards in food production, presentation, and kitchen hygiene.
  • Ensure all mise-en-place is properly prepared ahead of service.
  • Demonstrate strong product knowledge and actively participate in special events and functions.
  • Foster effective kitchen teamwork by delegating tasks, organizing events, and establishing positive relationships.
  • Assist supervisors with scheduling and support efficient workflow based on demand.
  • Uphold resort and brand standards, including HACCP and food safety protocols, and ensure proper labeling and inventory management (FIFO, expiry dates, asset inventories).
  • Monitor and report maintenance issues, ensuring all kitchen equipment and assets are well maintained and cleaned as scheduled.
  • Contribute to cost control by maintaining food costs and minimizing waste.
  • Attend all required training sessions, meetings, and daily briefings to stay current on resort activities and standards.
  • Train, motivate, and communicate effectively with staff to promote team spirit and uphold resort policies and emergency procedures.
  • Exhibit knowledge of the resort and local culture, adhering to ethical standards and regulations.
  • Demonstrate reliability through excellent attendance and punctuality and contribute to overall team satisfaction and productivity.

 

Skills, Experience & Educational Requirements

  • Culinary School Diploma holder
  • At least 2 years’ experience in similar role within a 5* hotel
  • Worked in different sections of Kitchen
  • Trained in Food Safety sytems (HACCP)
  • Basic computer skills
