With stunning resorts located across the globe and exciting expansion planned, Kerzner International currently has a fantastic opportunity for a Commis I to join the One&Only team at One&Only The Palm Hotel in Dubai.
With the global growth of our brands, you will be an integral part of the Resort’s success. As a Commis I, you will support the kitchen team in preparing high-quality dishes and maintaining exceptional culinary standards. You will be responsible for food preparation, mise-en-place, and assisting in the daily operation of your assigned kitchen section. Working closely with senior chefs, you will ensure consistency in food quality, adhere to hygiene and food safety standards, and contribute to delivering an outstanding dining experience for our guests.
Key Duties and Responsibilities:
- Assist in the preparation, cooking, and presentation of authentic French dishes in accordance with resort standards, recipes, and culinary guidelines.
- Prepare mise-en-place and ensure all ingredients are organized and ready before service.
- Support senior chefs in the daily operation of the French cuisine section.
- Ensure consistency, quality, and proper portion control of all food items.
- Inspect ingredients for freshness, quality, and suitability before use.
- Follow proper food storage, labeling, and stock rotation procedures (FIFO).
- Maintain high standards of hygiene, cleanliness, and food safety in compliance with HACCP standards.
- Minimize food wastage and ensure efficient utilization of ingredients.
- Ensure timely food preparation and smooth kitchen operations during service periods.
- Clean and maintain kitchen equipment, reporting any faults or maintenance requirements promptly.
- Assist in receiving, storing, and monitoring stock levels within the French kitchen section.
- Work closely with other kitchen sections to ensure seamless and efficient service.
- Participate in kitchen briefings, training sessions, and team meetings to enhance culinary skills and knowledge.
- Support banquet functions, special events, and high-volume operations when required.
- Maintain a positive, professional, and collaborative working environment.
- Comply with all company policies and local health, safety, hygiene, and sanitation regulations.
- Continuously develop knowledge of French culinary techniques, classic recipes, sauces, and presentation standards.
A suitable candidate should have 1–2 years of experience in a quality hotel, resort, or restaurant environment, with experience in French cuisine preferred. Strong knowledge of basic food preparation, French cooking techniques, kitchen operations, and culinary standards is essential. The candidate should be a motivated team player with excellent communication and interpersonal skills, a positive attitude, and a commitment to maintaining high standards of food quality, presentation, and hygiene. Good English communication skills are required, while knowledge of an additional language will be considered an advantage. Familiarity with classical French cuisine, sauces, stocks, and preparation methods is highly desirable.
