Job Summary

The Director of Beverage forms part of the F&B leadership team who collectively make key strategic and operational decisions for the division. The Director of Beverage is responsible for the smooth operation of all bars of the resort. The primary responsibilities for this position are to ensure our guests receive the highest level of Beverage quality and service, manage and develop a team, monitor and strive for the annual budget, manage labor cost and operating expenses for all the bars and develop relationships with guests, key suppliers and industry associates.


Key Duties and Responsibilities
•  Oversee leadership in the development and monitoring of beverage operations, fiscal budgets, guest service standards, and marketing strategies to produce both short‐term and long‐term profitability
•   Establish par levels for supplies, liquor, beer, wine and equipment, completing requisitions to replenish shortages or additional items needed for the anticipated business.
•    Oversee implementation of policies, operating procedures, training programs, directives, menus, work schedules, rules and regulations for the beverage staff and personnel
•    Maintain complete knowledge of all liquor brands, beers and non‐alcoholic selections available in outlets, the particular characteristics and description of every wine/champagne by the glass and major wines on the wine list, designated glassware and garnishes for drinks, all bar menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices
•    Create, develop and implement beverage concepts for new outlets during the pre-opening
•    Work with Brand Partners to review and establish standards, staffing levels, recruitment strategy, alignment with hotel policies and SOPs, etc. 
•    Maintain the highest standards of health, sanitation and cleanliness within all areas of Beverage. Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
•    Manage beverage inventory and cost control
•    Design and direct special event beverage service set-up
•    Scout for trends to enhance our beverage offer and leads the implementation on the fleet to generate additional revenue opportunities
•    Remains aware of internal and external conditions and industry innovations and best practices and applies this knowledge as appropriate in managing and leading company's beverage operations
•    Responsible for the financial performance of the Beverage department
•    Manage annual budget for the beverage operation, including all beverage related revenue and cost accounts
•    Monitor the execution of key operational processes, such as training, quality/recipe control, steps of service, inventory and ordering processes
•    Provide beverage leadership and expertise to various company projects and business initiatives
•    Any other tasks / duties as assigned

 

Skills, Experience & Educational Requirements

  • Minimum 3 - 5 years’ experience in a similar role in a luxury restaurant with direct P&L responsibilities, or an equivalent combination of education and experience
  • Management experience in complex Food and Beverage operations
  • International experience preferred.
  • Must be an exceptional leader and business driven, with innovation and creative skills.
  • Prior experience in managing food & beverage costs and inventory control.
