About The Role

 

As Junior Sous Chef – Indian Cuisine at The Meydan Hotel, you will lead the Indian kitchen section, championing authentic flavors and the highest standards of culinary artistry. Your leadership will help foster innovation in our dining offerings, while also guiding and inspiring fellow chefs to excel within a dynamic, collaborative environment.

 

Key Duties And Responsibilities

 

  • Lead and oversee the daily operations of the Indian kitchen section, ensuring smooth workflow and consistent quality.
  • Develop, coach, and train team members in both traditional and contemporary Indian culinary techniques.
  • Ensure food preparation and presentation consistently meet the restaurant’s quality and authenticity standards.
  • Collaborate with the Chef De Cuisine to design and introduce new Indian menu items that excite and inspire guests.
  • Manage inventory, ordering, and stock rotation for the Indian kitchen, maintaining cost efficiency and freshness.
  • Uphold stringent hygiene and safety standards within the kitchen, conducting regular checks and facilitating ongoing training for staff.
  • Monitor and ensure compliance with food safety regulations and hotel policies.
  • Assist in menu planning and pricing by researching trends and customer preferences in Indian cuisine.
  • Participate in special events and promotions, offering creative input and culinary expertise.
  • Address guest feedback with professionalism, striving to exceed expectations and resolve concerns swiftly.
  • Support cross-functional cooperation with other kitchen stations and departments to optimize operations and service delivery.

Skills, Experience & Educational Requirements

 

  • Proven experience in Indian cuisine within a luxury hotel or fine dining restaurant.
  • Comprehensive knowledge of regional Indian recipes and contemporary culinary techniques.
  • Expertise in varied Indian cooking styles (tandoor, curry, biryani, etc.).
  • Demonstrated leadership capabilities, including mentoring and managing kitchen teams.
  • Ability to perform under pressure and maintain exceptional standards during peak service times.
  • Effective communication and teamwork skills, contributing to a positive kitchen culture.
  • Keen attention to detail and a commitment to delivering outstanding guest experiences.
