About The Role

•    Ensures thorough implementation of the Health, Safety and Hygiene Standard Operating Procedures and Manuals based on the Bab Al Shams Desert Resort Brand Standard and Dubai Municipality regulation.
•    Ensures safety of the environment for employees and guests are maintained, and consistently strives for the betterment of all these areas.

 

Key Duties and Responsibilities  

•     Implements in a sequential way as laid out in Manuals, the policies relating to Health & Safety and Food Safety.
•    Liaises with the Executive Chef, Director of Engineering, F&B Manager, Housekeeping Manager, Human Resources Manager, Sports & Leisure Manager, and Rooms Division Manager for an effective safety system at the workplace.
•    Works closely with the Executive Chef to ensure all Food Safety Management Systems are consistently maintained at the highest level.
•    Works closely with the Director of Engineering to ensure all safety related standards related to maintenance are at the highest level.
•    Accidents / Incidents, Alleged Food Poisoning & Foreign Material in Food reports to be investigated and produce action plan accordingly to prevent reoccurrences and ensure accurate recording of all information. 
•    Regular Inspections, Audits and Tours of the Hotel and produce action plans of all Hazards identified to the concerned departments for action and ensure accurate recording of all information. 
•    Ensures all statutory training for employees is performed according to the policy and records are maintained and available.
•    Maintains constant vigilance in Health & Safety matters relating to hotel objectives. 
•    Always demonstrates pride in the workplace and personal appearance when representing the Hotel, thus identifying a high level of commitment.
•    Ensures department heads progress in their health and safety risk assessments and provides direction and assistance where required.
•    As required, meet & liaise with enforcement officers & other officials from external organizations.

 

Health
•    Monthly F&B and Kitchen outlets inspection and reports to the concerned for the actions and corrective actions.
•    Verification of hotel swimming pool chemical and microbiological analysis reports including legionella organism and ensure results are within the limits.
•    Ensures the pest control measures are strictly followed and monitored.
•    Ensures the water sampling is carried as scheduled.
•    Conducts awareness sessions for the Team.
•    Implements and monitors illness agreement reporting by the food handlers.
•    Ensure First Aid Boxes in the Resort are refilled in a monthly basis.
•    Ensures the local authority's Public health requirements for the Resort, Food Safety, Private Clinic, Spa, swimming pool, health Clubs, staff accommodation, machinery safety, electrical safety, Pest control, Occupational health cards, chemical store, Personal protective equipment and reporting to the concerned departments.

 

Safety
•    Develop and implement safety procedures and policies.
•    Monitors, analyses, and reports on the performance of the health and safety programs. 
•    Monitors accident and incident reports to formulate a trend analysis and proactively applies the necessary corrective or preventative measures.
•    Assesses, investigates, and reports on health and safety incidents and manages the corrective and responsive actions with all relevant departments.
•    Liaises with departments and assists technically with safety-related matters.
•    Liaises with departments to proactively identify health and safety shortcomings & development needs.
•    Liaises with departments to complete the risk assessment on periodic basis and whenever required.
•    Liaises with all department heads on issues relating to the application of health and safety programs and assesses each department/function development needs.
•    Attends management meetings as required and actively participates in the functional processes of the Health and Safety departments. 
•    Liaises with the security department to conduct fire safety drills.
•    Liaises with departments to conduct the required and mandatory training carried out internally & externally.
•    Arrange and relocate health & safety posters periodically.
•    Health & Safety induction training for newly joined colleagues.
•    Liaises with departments for equipment and safety checks.
•    Liaises with Dubai municipality during their routine inspection and coordinates with the team.
•    Liaises with departments to ensure the mandatory certificates and approvals are obtained related to the operation.
•    Liaises with chemical suppliers, pest control contractors, and waste management contractors.
•    Conducts awareness training on waste management, pest control, chemical handling, and breakage reporting etc.
•    Conducts Safety Induction during meetings as required
•    Ensures the local authority's Public health requirements for the Resort, Food safety, Private clinic, Spa, swimming pool, health Clubs, staff accommodation, machinery safety, electrical safety, Pest control, Occupational health cards, chemical store, Personal protective equipment and reporting to the concerned departments.

 

Hygiene
•    Works as the HACCP Team leader
•    Provide food safety training including PIC, BFH, BFH refresher, Allergen awareness, HACCP Awareness, etc.
•    Conducts weekly walk around and reports to the concerned for the actions and corrective actions if required.
•    Liaises with Dubai Municipality food control and Training dept and communicates with the team.
•    Accompanied with Duty Manager during their routine inspection and coordinated with the team for the departmental actions in case of any.
•    Monthly inspection in food areas which includes food receiving area, Food store, Kitchen, F&B outlets, and report preparation and follow-up with the concerned departments
•    Bi – annually internal food safety audit with the HACCP team and prepare the reports and monitoring until the actions are completed by the Team.
•    Conducts monthly HACCP meetings.
•    Managing overall food safety standards within the hotel.
•    Carries out food poisoning allegation investigation and follow up with the respective departments.
•    Develop and implement food safety procedures and policies.
•    Liaises with procurement and food suppliers to conduct audit in supplier’s premises.
•    Liaises with the external laboratory for monthly food, water & swab sampling.
•    Liaises with pest control for pest control treatments and requirements.
• Follow up with the Team for the actions recommended by the pest control contracting company.
•    Liaising with the certification body for HACCP audits  & coordinating with the team
•    Monitors External audits and follows up with the reports.
•    HACCP Record verification.
•    Bi-annual probe thermometer calibration.
•    Monitoring food handlers that they have adhered to food safety policy.
•    Liaises with the HACCP team to the continual development of the food safety management system.
•    Develops and updates policies, food safety manual, and its implementation.
•    Maintains the annual training calendar and identifies needs for training.
•    Liaises with L&D department to schedule Food safety-related trainings.
•    Investigating reasons for any outbreaks.
•    Liaises with Human resources and hotel clinic for Occupational health cards issued by Local Authority.
•    Liaises with Dubai Municipality to obtain temporary permits for events.
•    Liaises with stewarding departments for effective cleaning program.
•    Liaises with the Engineering Team to ensure preventive measures are carried out on a scheduled basis.
•    Ensures the food safety standards are followed during the outside catering events.

 

Sustainability

•    Coordinate Monthly Green Team Meetings with Green Team Coordinator
•    Work Closely with all departments to ensure 19 measures of sustainability are compliant as per DST.
•    Coordinate all ongoing sustainable projects and activities for the ongoing support to the Kerzner Earth Check program to achieve Hotel KPI.


Experience & Educational Requirements

•     Bachelor of Science/Graduate Degree in any food-related science or a similar discipline, namely Microbiology, Food Technology, Food Science, Food Engineering, etc.
•    NEBOSH Certified
•    Level 4 Award in Managing Food Safety
•    10 years in the field of Occupational Safety and Health.    
•     5 years’ experience at the management level.  
•    Middle East experience preferred
•    To familiarize yourself with the Legal requirements of the Company and the Local Federal Labour Laws
