With stunning resorts located across the globe and exciting expansion planned, Kerzner International currently has a fantastic opportunity for a Sous Chef (Greek Cuisine) to join the culinary team at the One&Only The Palm Resort in Dubai.
With the global growth of our brands, you will be an integral part of the Resort’s success. As Sous Chef – Greek Cuisine, you will oversee and support all aspects of the Greek kitchen operations, assisting the Chef de Cuisine in coordinating and supervising the daily running of the assigned kitchen department. Your focus will be on maintaining the highest culinary standards, ensuring authentic and high-quality Greek cuisine, and achieving maximum guest satisfaction. You will contribute to increasing sales, controlling food costs, and managing kitchen expenses within budget. In the absence of the Chef de Cuisine, you will assume full responsibility for leading and managing the kitchen team and operations.
Key Roles and Responsibilities:
- Lead by example in adhering to time and attendance standards as outlined in the company handbook.
- Ensure all areas of responsibility within the Greek kitchen are checked, organized, and prepared according to departmental checklists.
- Supervise and support team members to perform in line with their job descriptions, company standards, and established operating procedures.
- Ensure all kitchen staff report to duty on time, are correctly groomed and uniformed, and comply with all hygiene, health, and safety regulations.
- Conduct daily on-the-job training, assist the Chef de Cuisine with monthly training programs, and actively participate in developing the culinary skills of the team.
- Maintain a safe working environment for all kitchen personnel and ensure compliance with health and safety standards.
- Ensure all maintenance issues related to kitchen equipment and facilities are promptly reported and recorded.
- Oversee and verify all deliveries, ensuring products meet agreed standards for quality, quantity, and price, with a particular focus on ingredients used in Greek cuisine.
- Monitor food production and storage practices to minimize waste and maximize cost efficiency.
- Regularly review staffing levels within the Greek kitchen to ensure adequate coverage and operational efficiency.
- Ensure timely and efficient food preparation and service, maintaining the highest standards of quality and presentation.
- Maintain excellent guest relations by ensuring all feedback and complaints are addressed promptly and professionally, achieving maximum guest satisfaction.
- Develop and present innovative ideas for authentic Greek dishes, seasonal menus, attractive presentations, and food promotions to enhance the guest dining experience and drive revenue.
- Support the Chef de Cuisine in managing the day-to-day operations of the Greek kitchen and assume full responsibility for the department in their absence.
A suitable candidate will report directly to the Chef de Cuisine and should have a minimum of 2–3 years of experience as a Sous Chef specializing in Greek Cuisine within an upscale 5-star hotel or resort environment. The candidate should possess strong culinary knowledge of authentic Greek cuisine, excellent personal and interpersonal skills, and demonstrate flexibility as a dynamic team player. They should be committed to delivering the highest standards of food quality and guest service. Excellent communication skills in English are essential, and proficiency in an additional language will be considered an advantage.
