Key Duties and Responsibilities
- Take full operational ownership of the assigned kitchen section, ensuring consistent quality, presentation and execution
- Prepare and execute dishes in line with Sumosan Japanese fusion standards, recipes and brand expectations
- Ensure all mise en place is completed accurately and efficiently prior to service
- Support Sous Chef and Head Chef during daily operations to ensure smooth service flow and teamwork
- Maintain high levels of discipline, organisation and cleanliness throughout preparation and service
- Train, guide and support Commis Chefs and Demi Chefs, contributing to their development and performance
- Adhere strictly to HACCP, food safety, hygiene and sanitation standards at all times
- Ensure correct storage, labelling, FIFO and waste control within the section
- Assist with daily ordering, stock control and inventory management as required
- Contribute ideas to menu development and continuous improvement while respecting brand identity
- Maintain equipment and work areas in clean, safe and operational condition
- Communicate effectively with colleagues to support a positive and professional kitchen environment
Skills, Qualifications and Requirements
- Proven experience as a Chef de Partie or strong Demi Chef de Partie in a premium or high-volume restaurant
- Exposure to Japanese or Asian-inspired cuisine preferred
- Solid technical cooking skills with strong attention to detail
- Ability to perform under pressure in a fast-paced service environment
- Good understanding of HACCP and food safety standards
- Strong organisational and time-management skills
- Team-oriented mindset with the ability to train and support junior team members
- Professional attitude, reliability and commitment to quality
- Flexibility to work shifts, weekends and holidays as required
- Fluency in English; additional languages considered an advantage
