Job Summary
The Food & Beverage Manager is responsible for the successful day-to-day leadership, operational excellence, and financial performance of all Food & Beverage outlets at One&Only Aesthesis. The role ensures exceptional guest experiences through the delivery of personalized and anticipatory luxury service aligned with One&Only, Forbes Travel Guide and LQA standards.
The Food & Beverage Manager acts as the key operational support for all F&B outlet leaders, fostering collaboration, developing talent, driving performance, and serving as the primary liaison between Outlet Managers and the Director of Food & Beverage.

Key Duties & Responsibilities

Leadership & Operations

  • Oversee the daily operation of all Food & Beverage venues, ensuring seamless execution of service and operational excellence.
  • Support and guide all Outlet Managers in achieving departmental objectives, financial targets and guest satisfaction goals.
  • Act as the primary communication link between Outlet Managers and the Director of Food & Beverage.
  • Ensure consistency of service standards, procedures and guest experience across all F&B outlets.
  • Conduct regular operational inspections and quality audits to maintain the highest luxury hospitality standards.
  • Be highly visible in all outlets during service periods to support teams and engage with guests.
  • Lead and coordinate special events, VIP visits and high-profile functions.
  • Collaborate closely with Culinary, Housekeeping, Engineering, Finance, HR, Learning & Development and other departments to ensure operational success.

Guest Experience & Luxury Service Excellence

  • Ensure all outlets deliver exceptional guest experiences in line with One&Only brand standards.
  • Champion a culture of anticipatory, personalized and engaged service.
  • Monitor guest feedback, online reviews and service recovery opportunities.
  • Resolve guest concerns promptly and professionally, ensuring positive outcomes.
  • Build strong relationships with repeat guests and VIP clientele.
  • Forbes Travel Guide & LQA Standards
  • Lead the implementation, monitoring and continuous improvement of Forbes Travel Guide and Leading Quality Assurance (LQA) standards throughout the F&B division.
  • Conduct regular audits, coaching sessions and service evaluations to ensure compliance.
  • Ensure all managers and colleagues understand and consistently execute Forbes and LQA service expectations.
  • Develop action plans to address audit findings and improve quality scores.
  • Partner with Learning & Development to enhance luxury service delivery and guest engagement.

Recruitment, Talent Development & Training

  • Partner with Human Resources in workforce planning, recruitment and talent acquisition for all Food & Beverage positions.
  • Participate in interviews, candidate assessments and selection decisions.
  • Support onboarding and integration of all newly hired F&B colleagues.
  • Ensure effective departmental orientation and induction programs.
  • Develop and implement training plans to enhance service, product knowledge and leadership competencies.
  • Coach, mentor and support Outlet Managers in colleague development and succession planning.
  • Identify high-potential talent and create development opportunities within the department.
  • Foster a positive, high-performance culture focused on engagement and continuous improvement.

Financial & Commercial Management

  • Monitor departmental revenues, payroll, productivity and operating expenses.
  • Assist the Director of Food & Beverage in developing budgets, forecasts and business strategies.
  • Analyze financial performance and implement corrective actions where required.
  • Support menu engineering, pricing strategies and promotional initiatives.
  • Maximize profitability while maintaining luxury service standards.

Compliance, Health & Safety

  • Ensure compliance with all local regulations, food safety standards and company policies.
  • Maintain the highest standards of cleanliness, hygiene and sanitation across all F&B operations.
  • Ensure colleagues are trained and compliant with health and safety procedures.
  • Support emergency preparedness and risk management processes.

People Management

  • Conduct regular performance discussions and development reviews.
  • Drive colleague engagement, recognition and retention initiatives.
  • Address employee relations matters fairly and professionally in partnership with Human Resources.
  • Promote Kerzner's values, culture and service philosophy.
  • Ensure grooming, appearance and professional conduct standards are consistently maintained.

Skills, Experience & Educational Requirements

  • Bachelor's Degree in Hospitality Management, Business Administration or related discipline preferred.
  • Minimum 5 years' experience in a Food & Beverage management role within a luxury hotel or resort environment.
  • Proven experience managing multiple outlets and large teams.
  • Previous experience within Forbes Five-Star, LQA accredited or equivalent luxury hospitality environments preferred.
  • Experience in recruitment, talent development and leadership coaching.
  • Strong leadership and people management capabilities.
  • Comprehensive understanding of luxury hospitality service standards.
  • Knowledge of Forbes Travel Guide and LQA standards.
  • Strong financial acumen and business analysis skills.
  • Excellent communication, interpersonal and coaching abilities.
  • Ability to manage multiple priorities in a dynamic environment.
  • Proficiency in Microsoft Office applications and hotel management systems.
  • Fluent English, written and spoken; additional languages are considered an advantage.
