The role is responsible for supporting the culinary operations of the kitchen at Manko Athens, ensuring the consistent delivery of high-quality dishes aligned with the restaurant’s Peruvian-inspired concept and international standards. The position oversees daily kitchen organization, food quality, and operational efficiency while maintaining cost-effective practices and strict food safety compliance. Working closely with the culinary leadership team, the role also contributes to maintaining the creative and vibrant dining experience that defines the Manko concept.

Key Duties and Responsibilities

  • Responsible for the daily requisition and control of kitchen stocks, ensuring the consistent quality of ingredients while maintaining effective cost management aligned with the restaurant’s operational targets.
  • Ensures that all kitchen procedures, preparation standards, and quality controls are consistently followed across all shifts, maintaining the high culinary standards expected within a premium dining environment.
  • Supports the planning and organization of kitchen shifts, ensuring effective allocation of team members in order to maintain smooth service and high levels of productivity during both preparation and service periods.
  • Monitors daily stock records and inventory control within the kitchen to support efficient operations and minimize waste.
  • Ensures that the operational procedures and culinary standards established by the restaurant and resort are consistently implemented by the kitchen team.
  • Reports any equipment issues or maintenance requirements promptly and ensures that all kitchen equipment is used and maintained in accordance with company and manufacturer standards.
  • Maintains full compliance with all food safety, hygiene, and sanitation regulations, including HACCP standards and company procedures.
  • Supports the mentoring, training, and development of junior culinary team members, contributing to a positive and collaborative kitchen environment.
  • Assists with any additional responsibilities as required by the Executive Chef or members of the restaurant and resort management team.

Skills, Experience & Educational Requirements

  • Formal culinary qualification from a recognized culinary institute.
  • Minimum of four years of experience within a professional kitchen environment, ideally within upscale restaurants or hospitality venues known for high culinary standards.
  • Previous experience in a similar role or level within a high-volume restaurant operation is preferred.
  • Exposure to international cuisine and contemporary dining concepts, with an appreciation for Peruvian or Nikkei cuisine considered an advantage.
  • Strong understanding of kitchen operations, food preparation techniques, and service delivery within a premium dining environment.
  • Previous experience within luxury hospitality or high-end lifestyle restaurants would be considered beneficial but is not essential.
