Position Overview
This position is designed for a seasoned culinary professional who brings deep technical mastery of sushi and sashimi, combined with strong leadership capability and a structured, brand-led mindset. The successful candidate will take ownership of quality, consistency and innovation across the sushi bar, ensuring that every interaction reflects both the Sumosan philosophy and the One&Only service ethos.
Key Duties & Responsibilities:
- Uphold and continuously elevate sumosan and one&only culinary standards, ensuring exceptional quality, consistency and presentation across all sushi and sashimi offerings
- Lead the sushi operation end-to-end, acting as a key operational partner to the chef de cuisine and executive sous chef
- Take full ownership of the sushi section in the absence of senior kitchen leadership, ensuring seamless service continuity
- Drive a culture of excellence through hands-on leadership, coaching, training and performance development of the sushi team
- Ensure all mise en place is prepared accurately and efficiently ahead of service, in line with operational forecasts
- Maintain strict compliance with haccp, food safety, hygiene and sanitation standards, proactively identifying and mitigating risk
- Oversee inventory management, ordering, stock rotation (fifo) and expiry control to support food cost targets and minimise waste
- Actively contribute to menu innovation, product development and creative presentation, aligned with brand positioning
- Handle guest interactions and feedback professionally, delivering effective service recovery where required
- Coordinate and support special events, functions and bespoke dining experiences
- Ensure all kitchen equipment and fixed assets are maintained, clean and fully operational, escalating issues where necessary
- Support financial performance through cost awareness, productivity optimisation and sustainable operational practices
- Foster strong cross-functional communication and collaboration within the kitchen and wider resort operation
Skills, Qualifications & Requirements:
- Culinary school diploma or equivalent professional qualification
- Minimum 7 years’ experience in professional kitchens, with at least 5 years in a high-end sushi bar environment
- Proven experience within a luxury or five-star hospitality setting
- Advanced knowledge of sushi and sashimi, including fish preparation, handling and cutting techniques
- Demonstrated leadership capability with experience managing, training and motivating culinary teams
- Strong understanding and practical application of haccp and food safety systems
- Fluency in english; additional languages considered an advantage
- High standards of personal hygiene, grooming and professional conduct
- Strong organisational skills with the ability to manage multiple priorities in a fast-paced environment
- Commercial awareness with experience managing food cost, inventory and waste control
- Confident user of microsoft office and kitchen management systems
