Job Summary
To oversee and manage the stewarding and cleaning operations to ensure the highest standards of hygiene, sanitation, and operational efficiency are maintained across all kitchen and food service areas in accordance with company standards and food safety regulations.
Key Duties and Responsibilities
Responsible for managing the stewarding team and ensuring all cleaning, sanitation, and support operations run efficiently. Main duties include:
• Supervising and coordinating all stewarding staff, including shift allocation and daily task management
• Ensuring all kitchen equipment, utensils, crockery, cutlery, and operating equipment are cleaned, sanitized, and maintained to required standards
• Monitoring hygiene and sanitation standards in all food preparation and service areas
• Ensuring compliance with Food Safety standards – HACCP / FSMS and company hygiene procedures
• Planning manpower requirements and scheduling shifts to support operational demands and special events
• Conducting training and development programs for stewarding employees and ensuring continuous performance improvement
• Coordinating with Executive Chef, kitchen teams, and management to ensure smooth kitchen and banquet operations
• Managing function setup and breakdown requirements in coordination with relevant departments
• Monitoring stewarding stores and controlling usage of cleaning chemicals, supplies, and equipment
• Inspecting cleaning processes and ensuring correct chemicals, tools, and methods are used in all designated areas
• Ensuring dishwashing temperatures and recycling procedures are maintained according to approved operational standards
• Monitoring proper handling, storage, and maintenance of operating equipment to reduce breakages and losses
• Ensuring correct polishing and maintenance procedures are followed for silver, copper, brass, gold, and specialty items
• Conducting regular inspections of stewarding machinery and ensuring equipment is operated only by trained personnel
• Maintaining accurate records, cleaning schedules, inventory reports, and compliance documentation
• Leading health and safety initiatives and ensuring all team members comply with workplace safety regulations
• Investigating operational issues and implementing corrective actions to improve efficiency and service quality
• Supporting management with additional operational duties as assigned
Skills, Experience & Educational Requirements
• Minimum 3–5 years’ experience in Stewarding operations with at least 1–2 years in a supervisory or leadership role
• Strong understanding of Health & Safety procedures, food hygiene standards, and chemical handling
• Knowledge of HACCP, sanitation systems, and stewarding best practices
• Leadership and team management skills
• Strong organizational and communication abilities
• Ability to work under pressure in a fast-paced hospitality environment
• Competent in training, motivating, and developing team members
• Good problem-solving and decision-making skills
• Professional appearance and grooming standards
• Diploma or equivalent qualification in Hospitality Management is an advantage
