JOB SUMMARY
The Assistant Manager-Restaurant assist the outlet manager to lead manages and organizes all requirements for the Restaurant to the highest standards and in accordance with the standard operating procedures as determined by the Manager, Food & Beverage /Director of Food & Beverage. He/She ensures proper sanitation in the outlets under his/her jurisdiction, adequate stocks of food &Beverage, inter – department coordination and training. Carries full responsibility of the operation. Equipment including inventory levels, Displays creativity in Beverage and Wine menu design with the Wine Sommelier and Beverage Manager. Suggest innovative Sales programs and ensures that the department exceeds revenue budgets and beverage cost set by the resort. Ensures and enforces the set service standard procedures by coaching, supervising, training and motivating staff to perform to the highest level of service. Communicates with guests and shares feedback with Chefs and Restaurant Manager to ensure high levels of food & beverage service quality and guest satisfaction are maintained at all times.
KEY DUTIES AND RESPONSIBILITIES
- Demonstrates excellent product knowledge of all food, beverage, tobacco and special functions held at the resort.
- Participates in the service of any special functions or events organized by the resort.
- Ensures that channels of communication are respected, and information is disseminated to the correct receivers.
- Ensures excellent communication and working relationships with colleagues are maintained and contribute to the team spirit.
- Ensures that the restaurant menus are clean, organized and free of errors.
- Delegates responsibilities to restaurant personnel and ensures tasks are completed.
- Conducts performance appraisals for colleagues and ensures it is completed on time.
- Continuously trains and motivates subordinates to ensure resorts standards are maintained.
- Assist the Collogues with developing the knowledge, skills and competency levels of all employees within the Department.
- Ensures expiree dates are labeled on products that are required.
- Supervises the collection and distribution of outlet incentives.
- Control all the costs and expenses as per the monthly budget set by F&B department.
- Complies with the Resort’s purchasing and stores requisitioning procedures, in respect of Internal and external supplies.
- Presents oneself in a way that enhances the overall guest experience, by adding life and energy to the outlet.
- Ensures that all mise en place is correctly prepared prior to commencing service.
- Ensures that the set up and layout of the Restaurant and bar with surroundings are flawless and reflect the image of the resort.
- Generates reports for the outlet and ensures that they are delivered to the correct receivers as per the deadline.
- Organize and coordinate special functions/events as required.
- Generate or assists manager in generating work schedules & vacation planner for restaurant employees, according to forecasted demand requirements.
- Ensures Quality and presentation of menus and services in all restaurant and bars are immaculate.
- In the absence of the manager, the assistant manager attends F&B morning briefings and passes information to restaurant employees.
- Delegates responsibilities to all employees and ensures tasks are completed timeously.
- Remains current on all resort happenings, including guests in-house, arrivals and departures as well as daily events.
- Conducts a daily briefing together with restaurant manager prior to service and a de- briefing once a week with team members.
- Assist manager to develop realistic action plans aimed at introducing and / or improving service, procedures and working methods.
- Supports manager to successfully executes ESI Action Plan to achieve an engagement score set by the resort on annual basis.
- Responsible for planning, organizing and delivering training for the department.
- Assisting the manager with financial reporting.
- Conduct disciplinary actions when requested and required.
- Handle guest requests and complaints in an effective and efficient manner to satisfy all relevant stakeholders.
SKILL EXPEREINCE & EDUCATIONAL REQUIREMENT
- Fluent in written and spoken English, other languages a distinctive advantage.
- To be able work well under pressure
- 2-year experience in a similar capacity
- To be able to communicate effectively and to do multi tasks.
- Computer literate (Microsoft Office, Micros)
- Diploma in Hospitality & Tourism Management or similar educational program
