JOB SUMMARY

 

To ensure the efficient running of the culinary division by achieving annually set targets for Colleague Satisfaction, Guest Satisfaction, and GOP.

 

KEY DUTIES AND RESPONSIBILITIES

 

  • Align management style, working practices, and conduct with One&Only Reethi Rah’s and Kerzner’s vision, Global Support values, operating standards, and policies. To always comply with Kerzner’s code of conduct.
  • Be responsible for the management of the Culinary Division.
  • Ensures all HACCP standards are followed and improved consistently. 
  • Understand the meaning and implications of key internal and external financial indicators; manage overall financial performance; use sound financial analysis to evaluate strategic and investment opportunities.
  • Add value through revenue growth and operational efficiency through process improvement; understand and focus on the key drivers of sales, associate and customer satisfaction, profitability, and quality.
  • Provide direction and vision for all direct reports and their subordinates, promoting a free flow of information; encourage open expression of ideas and opinions.
  • Conduct regular SMART plan reviews with all direct reports to ensure follow-up to achieve the agreed goals & and objectives. 
  • Demonstrate honesty, reliability, ethics, and professionalism; demonstrate consistency between words & and behavior.
  • Attract and retain high potentials; coach and develop others; communicate views about performance honestly and directly, while consistently recognizing and rewarding good performance.
  • Build a team with different opinions, skills, experiences, and backgrounds; leverage personal, cultural, and functional differences to optimize team performance.
  • Understand and abide by all government laws relating to the resort. 
  • Be actively involved in enforcing compliance with all Kerzner International programs.
  • Be critical and demanding of operating standards.
  • Monitor and control all financial aspects of the culinary division including the preparation of a realistic and attainable annual business plan.
  • Take note of outstanding tasks of other departmental concerned and follow up with appropriate EXCOM.
  • Be well-versed and knowledgeable of the hotel's Fire Evacuation and Emergency procedures as well as health and safety requirements in the Workplace. Ensure colleagues are aware of their duty of care as determined by legislation and that they maintain complete familiarity.
  • Be innovative with everything you do.
  • Dedicate time to your personal development.
  • Drive GSQ action plan follow-up every month with direct reports. 
  • Deliver a monthly report on Key issues, developments, outstanding works, and personal and financial concerns to the Resort Manager.
  • Undertake additional duties as requested by the Resort Manager.
  • Be a brand ambassador to the guests; meet guests regularly and take ownership of complaints as may be required to guarantee exceptional levels of guest satisfaction.
  • Liaises and coordinates with the Food and Beverage Director for all outlets and function promotions and actions. 
  • Ensures the quality levels of kitchen production and presentation are always maintained at their highest level. 
  • Conduct performance appraisals for kitchen employees. 
  • Remains current on all resort happenings, including guests in-house, arrivals and departures, as well as daily events


SKILL EXPERIENCE & EDUCATIONAL REQUIREMENT 

 

  • Ability to lead, motivate, and develop colleagues.
  • Be innovative, and financially savvy, and connect emotionally with guests and internal customers.
  • Be well versed in the Colleague's competencies of Kerzner International.
  • 2 years experience in a similar position in an executive committee capacity.
  • Excellent verbal and written communication skills, and people management skills.
  • Must be able to speak, read, write, and understand the primary language(s) used in the workplace.
