JOB SUMMARY

 

The manager of the Restaurant leads, manages, and organizes all requirements for the restaurant to the highest standards and by the standard operating procedures as determined by the Manager, Food and beverage/ Director of Food and beverage. He ensures proper sanitation in the outlets under his/her jurisdiction, adequate stocks of food & and beverage, inter–department coordination, and training. Carries full responsibility for the operating equipment including inventory levels. Displays creativity in menu engineering together with F&B management and ensures that the department exceeds revenue budgets and costs set by the resort. Ensures and enforces the set service standard procedures by directing supervising, training, and motivating staff to perform to the highest level of service. Communicates with guests and shares feedback with Chefs and Management to ensure high levels of food & and beverage service quality and guest satisfaction are always maintained. 

 

KEY DUTIES AND RESPONSIBILITIES

 

  • Ensures that all mise-en place is correctly prepared before commencing service. 
  • Participates in the service of any special functions or events organized by the resort. 
  • Presents self in a way that enhances the overall guest experience, by adding life and energy into each outlet. 
  • Demonstrates excellent product knowledge of all food, beverage, tobacco, and special functions held at the resort. 
  • Ensures that the setup and layout of the restaurant are flawless and reflect the image of the resort. 
  • At all times, act responsibly, especially regarding the sale of alcoholic beverages. 
  • Maintains and creates a working environment that reflects a sense of place. 
  • Generates reports for the outlet and ensures that they are delivered to the correct receivers as per the deadline. 
  • Assists supervisors in generating work schedules for restaurant employees, according to forecasted demand requirements. 
  • Ensures Quality and presentation of menus and services are at the highest standard emanated by O&O Reethi Rah  
  • Attends F&B morning briefings and disseminates information to restaurant employees. 
  • Delegates responsibilities to restaurant employees and ensures tasks are completed timeously. 
  • Ensures that a safe, hygienically fit working environment is always maintained and reports any concerns or faults immediately to concerned departments. 
  • Develop realistic action plans aimed at introducing and/or improving service, procedures, and working methods. Monitors systematically the performance of the department to raise the bar. 
  • Successfully executes Employee Satisfaction Index Action Plan to achieve an engagement score set by the resort. 
  • Ensuring SOP is adhered to consistently daily. 
  • Responsible for planning, organizing, and delivering training for the department. 
  • Maintain and uphold all health and safety standards for the department and the resort. 
  • Responsible for the financial outcome of the outlet and ensures up to date with budget & and forecast. 
  • Conduct disciplinary actions as required. 
  • guest requests and complaints effectively and efficiently to satisfy all relevant stakeholders. 
  • Develops and maintains team morale. 
  • Attends and participates in all required team events. 
  • Must participate in required training organized by the learning & and development center. 
  • To effectively communicate and maintain a favorable working relationship with colleges at all levels. 
  • To be conscious and responsible regarding energy and water conservation. 
  • Apply and adhere to rules and regulations per the employee handbook, departmental and resort policies, and procedures, including those for emergencies. 
  • Ensures all activities are carried out honestly, ethically, and within the parameters of the Maldivian Law.
  • To perform all other jobs related to your scope of work, as requested by your superiors or other Managers.


SKILL EXPERIENCE & EDUCATIONAL REQUIREMENT 

 

  • Fluent in written and spoken English, with other languages a distinctive advantage.
  • To be able to work well under pressure.
  • Excellent Organizational Skills & Great Customer service skills
  • Computer literate (Microsoft Office, Micros)
  • To be able to communicate effectively and do multiple tasks.
  • Bachelor’s degree in food and beverage service operation or 2 years of experience as an F&B outlet manager in a 5-star hotel
