JOB SUMMARY
• He leads, manages stewarding and kitchens to the highest standards and in accordance with the standard operating procedures as emanated by the Chief Steward.
• Ensure proper sanitation in all kitchens and work area under his jurisdiction.
• Carries full responsibility of all operating equipment for kitchens and restaurant including its inventory levels. Works closely with all Outlet Managers about control of breakages and par stocks.
• Ensures and enforces the set service standard procedures by directing, supervising, and motivating staff to perform to the highest level of service.
• Communicates with all chemical suppliers about all chemicals, used for cleaning purpose for the resort (absent of Chief Steward).
KEY DUTIES AND RESPONSIBILITIES
• Demonstrates excellent product knowledge of chemicals which are used for cleaning and sanitizing.
• Does regular spot checks. (During nights specially)
• Ensures all fixed assets are well looked after and maintained.
• Ensures all maintenance work is dealt with in a timely and professional manner.
• Ensures that all Kitchens and surroundings are always kept clean and tidy.
• Is responsible for coordinating garbage removal from all the Kitchens and keeps good contact with contractors.
• Is responsible for the maintenance of all the machines use in kitchen, by taking regular inspection.
• Liaises with the Chefs de Cuisine, Executive Sous Chef and Executive Chef regarding buffet set-ups and clearance.
• Maintains and creates a working environment that reflects a sense of place.
• Makes sure that all tasks assigned by superiors are completed, in a timely fashion.
• Participates in the service of any special functions or events organized by the resort.
• Performs any additional or special duties, as directed by Chief Steward or Executive Sous Chef or Executive Chef.
• Responsible for day-to-day organization of work of the hygiene team.
• Responsible for day-to-day organization of the kitchen and food service back of the house areas to ensure hotel standards are met with respect to cleanliness and hygiene.
• Supervises team members and maintains effective employee relationships with the team.
• To take full responsibility for the section in the absence of Assistant Chief Steward.
• To perform all other jobs related to your scope of work, requested by your superiors or other Managers
Financial
• Initiates and submits all purchase orders of cleaning supplies, equipment and detergents for use for the department to the Food & Beverage Director.
• Minimizes breakages, and documents all loses in operation equipment, with coordination with the Finance department.
• Order chemical according to necessities and maintain budgets.
• Supervises the undertaking of physical asset inventories each month.
Health and Safety
• Ensures that a safe, hygienically fit working environment is maintained, always and reports any concerns or faults immediately.
• Ensures that equipment is cleaned, when necessary or according to their schedules.
• Maintains cleanliness of all kitchens operating equipment.
• Maintains highest levels of personal hygiene and grooming, always.
Training
• Assists Chief Steward in generating work schedules according to forecasted demand requirements.
• Attends all training carried out by the training department.
• Conducts a daily briefing with team members.
• Conducts a monthly communication meeting.
• Continuously trains and motivates subordinates to ensure that resort’s standards are maintained.
• Delegates responsibilities to coordinators, and ensures tasks are completed.
• Ensures that channels of communication are respected, and information is disseminated to the correct receivers.
Policies and Procedures
• Demonstrates knowledge and interest in the goals, and objectives of the One & Only brand and within the parameters of the Maldivian law.
• Ensures all activities are carried out honestly, ethically.
• Ensures excellent communication and working relationships with colleagues are maintained and contribute to the team spirit.
• Ensures that disciplinary actions are taken, when necessary, according to the resort’s policies.
• Exhibits outstanding knowledge of the resort, island, atoll, and the Maldivian culture.
• Knows and applies resort’s policies & procedures, including those for the emergency situations.
• Practices proper telephone etiquette with colleagues and guests.
• When driving the resort’s buggies, ensures that rules and regulations are always respected.
Performance Goals and Evaluation Criteria
• Achievement of guest satisfaction Index on monthly basis to 90% (Back of the house).
• Achievement of revenue budgets for the outlet.
• Attendance and Punctuality.
• Employee Satisfaction Index measured on quarterly basis.
• Individual productivity, work efficiency.
• Man, days of training attended.
• Should be in abidance with the expectations defined in the job responsibilities.
• Training of staff and their performance.
