About This Role
 
The Assistant Chief Steward is responsible for assisting the Chief Steward in the daily management of the Stewarding Department. The role ensures the cleanliness and sanitation of all kitchen areas, equipment, utensils, and food & beverage outlets while maintaining the highest standards of hygiene, health and safety. The Assistant Chief Steward supervises the stewarding team, controls operating equipment, and supports kitchen operations to ensure efficient and smooth service delivery.
 
Key Duties and Responsibilities
 
Assist the Chief Steward in the day-to-day management of the Stewarding Department.
Supervise, train, and motivate stewarding colleagues to ensure operational efficiency.
Ensure all kitchen areas, back-of-house facilities, and food service areas are maintained in a clean and hygienic condition.
Ensure all stewarding staff comply with HACCP, food safety, health and safety, and company standards.
Monitor and maintain cleanliness of kitchen equipment, utensils, crockery, cutlery, glassware, pots, and pans.
Ensure adequate stock levels of cleaning chemicals, operating equipment, and stewarding supplies.
Conduct daily inspections of kitchens, storage areas, and stewarding workstations.
Coordinate the collection, washing, storage, and distribution of operating equipment.
Assist with monthly inventories and stock control of stewarding equipment.
Report any damaged equipment and coordinate repairs or replacements.
Support kitchen and F&B teams during functions, events, banquets, and peak operational periods.
Maintain proper waste management and recycling procedures.
Ensure compliance with hotel environmental and sustainability initiatives.
Monitor staff attendance, grooming standards, and performance.
Assist in preparing duty rosters and work schedules.
Participate in recruitment, onboarding, and on-the-job training of stewarding personnel.
Investigate and report accidents, incidents, and safety concerns.
Ensure proper handling, storage, and usage of cleaning chemicals and machinery.
Conduct regular equipment maintenance checks and report faults immediately.
Attend departmental meetings and training sessions as required.
Perform any other reasonable duties assigned by management.
 
About You
 
Minimum 2 to 3 years of experience in a stewarding supervisory role within an international hotel, resort, or hospitality environment.Previous luxury or ultra-luxury hospitality experience is preferred.Strong knowledge of HACCP, food safety, sanitation, and health & safety procedures.Experience in team supervision and staff development.Knowledge of inventory control and operating equipment management.Ability to manage multiple tasks efficiently in a fast-paced environment.Strong organizational and leadership skills.Good communication and interpersonal skills.Fluent in spoken and written English; French is an advantage.Proficient in basic computer applications and reporting.
