About the Role

The Chief Steward is responsible to lead a team of Stewards in coordinating the back of house kitchen operations to facilitate the Chefs' team in delivering outstanding service.


Key Duties and Responsibilities

  • To lead, teach, coach, and inspire a team.
  • To ensure that all colleagues arrive for their shift on time, well-groomed and ready to work.
  • To assign tasks to all colleagues and to pass on events and information.
  • To ensure that all colleagues are following the proper procedures and standards set in place by the Executive Chef and the Resort.
  • To be responsible for the opening and closing shift checklists.
  • To ensure that all kitchens are cleaned, organised, and sanitized and the deep cleaning schedules by the team and other outside contractors are followed.
  • To ensure the water bottling plan is clean, organised, maintained as per SOP set.
  • To ensure the Heart of House, garbage areas, buffets, kitchens, and Back of House are kept in an exceptional state.
  • To ensure all daily tasks list are completed and customised.
  • To ensure that garbage & recycling removal is being done in a timely manner for the Resort.
  • To assist in the correct usage of all chemicals within the department and the Outlets, including appropriate training in accordance with Work Health and Safety standards.
  • To ensure hotel OSE par stocks are kept, breakage reports are done and presented monthly in operations meetings and orders for replacement are done in a timely manner.
  • To be the main point of call for event set-ups and equipment manoeuvring for events.
  • To ensure that all equipment is cleaned, maintained, and properly stored after an event.
  • To ensure all storage rooms and walk-in fridges are kept clean and organized.
  • To be responsible for rostering of the department.
  • To foster an environment of cooperation within the department and between other departments within the hotel. 
  • To encourage participation and input from all colleagues while promoting professional work habits.
  • To have a proactive eye for detail and cleanliness.
  • To ensure that all Food Safety standards – HACCP / KERZNER FSMS are followed to the fullest.
  • To adhere to all environmental policies and programs as required.
  • To follow the department policies, procedures, and service standards.
  • To always maintain a clean and safe work environment.
  • To take on all and any stewarding tasks as required.


About You

The desired qualification for this role is at least a Diploma in Hotel Management. The ideal candidate should have at least 3 years of experience in the same role and must be fluent in written as well as spoken English and French.
