About the Role

The Executive Pastry will, under the management of the Executive Chef, supervise the Pastry department to make it run well. He/She will assist the Executive Chef in the integration of the team to respect the setting up of the recipes and dressage. The Executive Pastry Chef will execute duties thoroughly, producing quality outputs with attention to details and will also adopt the mission and vision of the company.  

 

Key Duties and Responsibilities

  • To maintain HACCP standards, to check receiving of goods and quality of all received products (from dry store, deep freeze and fruits. FIFO).
  • To communicate clearly, frequently and in a timely manner.
  • To share information with the Pastry team in the daily line up.
  • To report any incident to the Executive Chef to act.
  • To check daily the staff planning schedule.
  • To have a critic eye on everything and to be innovative.
  • To always be on time and on schedule as well as to respect and respond positively to your superior and colleagues.
  • To maintain good working habits in the Pastry; to always keep clean.
  • To monitor cold room and cooking temperature.
  • To check the presence of a good hygiene prevailing in the department by promoting cleanliness, organization and sanitation of kitchen facilities as well as by assuring that the highest standards of personal hygiene are followed for all Pastry/Bakery Chefs.
  • To have excellent knowledge into menu creation whilst maintaining quality and controlling costs in a volume food business.
  • To operate and maintain all department equipment and reporting of malfunctioning.
  • To consult daily with the Executive Chef on the daily requirements, special functions/events and about any last-minute events.
  • To expertise oneself with plated & buffet desserts, pastry production, ordering and inventory on daily basis.
  • To be involved in achieving budgeted cost and reducing wastage to make profit.
  • To organize the daily production and MEP according to the hotel occupancy.
  • To be responsible for daily feedback collection and reporting of issues, when required.
  • To provide assistance throughout the various Outlets and to constantly be a mentor for all Pastry/Bakery colleagues and trainees of hotel school and coaching.
  • To set specific goals and objectives for key employees to enable future growth of the concept from existing ranks.
  • To manage the Pastry/Bakery team.
  • To always maintain the high level of quality and consistency of the products served during breakfast, lunch and dinner, in all Outlets.
  • To always seek & share freely with the Executive Chef for innovative ideas.

 

About You

The desired qualification for this role is at least a Diploma in Pastry. The ideal candidate should have at least 3 years of experience in the same role in an International Ultra-Luxury Resort and must be fluent in written as well as spoken English and French.
