Job Description – Commis Chef, Colleague Restaurant

 2 JOB Details & Requirements

Job Summary

To prepare and plan all Colleague meals and ensure the quality and standards as per One&Only are followed. Ensure all important information is communicated with the Chef de Cuisine. All HACCP standards are followed and improved consistently. Maintain highest levels of personal hygiene and grooming at all times, as per standard.

 

Key Duties and Responsibilities

  • Ensures the quality levels of kitchen production and presentation is maintained at its highest level at all times.
  • Ensures quantity of food prepared are in accordance with Colleague levels.
  • Participates in the service of any special functions or events organized by the Resort.
  • Establishes and maintains smooth work relationships in the kitchen.
  • Practices proper telephone etiquette with Colleagues.
  • Ensures all fixed assets are well maintained.
  • Ensures all the equipment faults are reported to the Chef de Cuisine.
  • Demonstrates knowledge and interest in goals and objectives of the One&Only brand.
  • All HACCP responsibilities, requirements and standards are followed and meet at all time.
  • Ensures expiree dates are labeled on products that are required and FIFO been followed.
  • Helps the undertaking of physical asset inventories each month.
  • Ensures that a safe, hygienically fit working environment is maintained at all times and reports any concerns or faults immediately.
  • Ensures kitchen fridges and back areas are thoroughly clean at all times.
  • Ensures that equipment is cleaned, when necessary or according to their schedules.
  • Attends all training carried out by the Training Department.
  • Attends monthly communication meeting.
  • Ensures that channels of communication are respected and information is disseminated to the correct receivers.
  • Ensures excellent communication and working relationships with Colleagues are maintained and contribute to the team spirit.
  • Knows and applies Resort’s Policies & Procedures, including those for the emergency situations.
  • When driving Resort’s buggies, ensures that rules and regulations are followed at all times.
  • Exhibits outstanding knowledge of the Resort, forest, and the Rwandan culture.
  • Ensures all activities are carried out honestly, ethically and within the parameters of the Rwandan Law.
  • Should be in abidance with the expectations defined in the job responsibilities.
  • Completes and efficiently sets up the respective kitchen that is assigned by the Chef de Cuisine.
  • Individual productivity, work efficiency.
  • Demonstrates excellent attendance and punctuality.
  • Attends all trainings conducted by the Resort.

     

Skills, Experience & Educational Requirements

  • Culinary school diploma or 1 year work experience, if possible in a similar environment is a valuable addition.
  • Basic English knowledge, any additional languages is preferable.
  • Must be willing to learn and skilled to perform the job of a Commis Chef, Colleague Restaurant.
  • Ability to lift heavy objects to complete duties.
  • Ability to perform assigned duties with attention to detail, speed, accuracy, follow-through, courtesy, cooperativeness and work with a minimum of supervision.
