About the Job  

As the Restaurant General Manager of Agua Restaurant, you will oversee the full operation of both restaurants, ensuring a seamless and world-class guest experience aligned with luxury hospitality standards. You will lead Area Managers/asisstants and Chefs de Cuisine, manage budgets, monitor KPIs, and drive operational excellence. Your role also involves menu development, marketing collaboration, and ensuring compliance with FSMS and Forbes-quality standards, creating memorable dining experiences that reflect our hotel’s reputation.This position plays a key role in enhancing guest satisfaction, managing critical guest touchpoints, and ensuring that all colleagues embody the resort’s luxury standards and philosophy. 

About You: 

  • Proven experience managing upscale, high-volume restaurants in luxury hospitality environments. 

  • Strong financial acumen with experience managing budgets, KPIs, and P&L statements. 

  • Exceptional leadership, coaching, and team development skills. 

  • Deep understanding of Forbes-quality standards and luxury guest expectations. 

  • Knowledge of FSMS standards and operational compliance in food and beverage. 

  • Committed to Learning & Development: skilled in mentoring, conducting trainings, and developing careers of team members. 

  • Creative and strategic thinker, able to innovate in menu, service, and marketing. 

  • Excellent communication, interpersonal, and decision-making skills. 

  • Passion for delivering exceptional dining experiences and maintaining operational excellence 

Key Responsibilities: 

  • Lead, mentor, and develop Area Managers and Chefs de Cuisine to achieve operational and service excellence. 

  • Ensure the team participates in monthly training programs and adheres to L&D guidelines. 

  • Support career development and succession planning for colleagues across both restaurants. 

  • Monitor restaurant budgets, P&L, and ensure profitability while maintaining high-quality standards. 

  • Oversee menu planning, pricing strategy, and implementation of culinary innovations. 

  • Collaborate with the F&B marketing team to develop and execute marketing campaigns and promotions. 

  • Ensure guest experiences meet Forbes and luxury hospitality standards at all touchpoints. 

  • Manage the payroll of colleagues and  supervisors (manager level) 

  • Monitor KPIs (revenue, covers, guest satisfaction, labor cost, waste management, etc.) and implement improvement plans. 

  • Ensure compliance with FSMS (Food Safety Management System) and local health regulations. 

  • Conduct regular audits of restaurant operations, service standards, and hygiene practices. 

  • Identify opportunities for operational improvements and implement best practices across both venues. 

 

 

Skills & Knowledge / Requirements 

  • Restaurant Management Experience: Minimum of 3 years managing high-end or luxury restaurants, overseeing daily operations, teams, and financial performance. 

  • Team Leadership & Development: Ability to lead, motivate, and develop Area Managers, Chefs de Cuisine, and staff, fostering a high-performance, service excellence culture. 

  • Financial Management: Strong knowledge of budgeting, P&L management, cost control, KPIs, and profitability strategies. 

  • Luxury Guest Experience: Deep understanding of Forbes-quality and luxury standards, ensuring every guest interaction meets premium expectations. 

  • Compliance & FSMS Knowledge: Experience implementing and monitoring Food Safety Management Systems, operational audits, and local health regulations compliance. 

  • Culinary & Menu Innovation: Skilled in collaborating on menu planning, pricing strategies, and developing innovative dining concepts. 

  • Marketing Collaboration: Ability to work with marketing teams on campaigns and promotions that enhance guest engagement and restaurant visibility. 

  • Strategic & Analytical Thinking: Capacity to identify operational improvement opportunities and implement effective, data-driven solutions. 

  • Communication & Interpersonal Skills: Excellent ability to communicate with colleagues, guests, and stakeholders, resolving conflicts and making informed decisions.
