About the Job

As Food & Beverage Director, you will provide strategic leadership to the Culinary and Food & Beverage divisions, ensuring an exceptional luxury hospitality experience for every guest. You will lead with a professional, warm, and enthusiastic approach, maintaining the highest brand and service standards while driving financial performance and operational excellence.

This role partners closely with the General Manager and Executive Committee to deliver memorable dining experiences, optimize profitability, and foster a culture of collaboration, accountability, and continuous improvement across all outlets, bars, events, and stewarding operations.

About You

You are a passionate luxury hospitality leader with a strong operational and financial background in Food & Beverage. You lead by example, thrive in a guest-facing environment, and balance creativity with discipline. You are proactive, organized, and solutions-oriented, with the ability to guide teams through challenges while maintaining exceptional service standards.

Key Duties and Responsibilities

Leadership & Operations

  • Report directly to the General Manager and act as a key member of the Executive Committee.
  • Oversee the preparation, implementation, and continuous update of departmental operations manuals and SOPs.
  • Conduct regular divisional communication meetings and ensure effective departmental briefings.
  • Supervise and support the Culinary Division in alignment with brand standards and guest expectations.
  • Maintain a visible leadership presence on the floor, observing guestcolleague interactions and coaching leaders to elevate service delivery.
  • Ensure all guest and internal complaints are resolved promptly, professionally, and to the satisfaction of the guest.
  • Foster positive guest and colleague relationships, promoting a culture of respect, teamwork, and service excellence.

Brand, Quality & Guest Experience

  • Ensure all mandatory brand standards are fully implemented and optional standards are adopted where appropriate for a luxury positioning.
  • Monitor operations during peak periods and adjust resources and service flow as needed.
  • Review consumer audit results, guest feedback, and quality scores, ensuring timely and effective corrective actions.
  • Taste and monitor all food and beverage offerings, providing constructive feedback to ensure consistency, creativity, and quality.
  • Ensure colleagues are knowledgeable about seasonal offerings, new products, and culinary trends.
  • Review and update all aspects of events and banquets management in coordination with the Executive Chef.

Financial & Strategic Management

  • Maximize productivity through multi-skilling, flexible scheduling, and effective workforce planning.
  • Ensure each profit center (restaurants, bars, events) operates to maximize profitability while delivering on the brand promise.
  • Control cost centers (including stewarding) to achieve optimal cost structures without compromising service quality.
  • Coordinate the preparation of the annual Food & Beverage budget and lead monthly forecasting and reforecasting.
  • Analyze business performance and market trends to enable accurate forecasting and strategic decision-making.
  • Proactively manage costs using key performance indicators, working closely with Department Heads.

People & Talent Development

  • Ensure Food & Beverage colleagues provide excellent internal service to all departments.
  • Oversee and support the recruitment, selection, and onboarding of all Food & Beverage colleagues
  • Develop Department Heads and future leaders through coaching, feedback, and performance management.

Key Qualifications & Competencies

  • Proven leadership experience in Food & Beverage within a luxury hotel or resort environment.
  • Strong financial acumen, including budgeting, forecasting, and cost control.
  • Exceptional guest service mindset with a hands on leadership style.
  • Ability to inspire, coach, and develop diverse, multicultural teams.
  • Excellent communication, organizational, and strategic thinking skills.
  • Flexibility to adapt to business needs and lead during peak operational periods.

Skills, Experience & Educational Requirements

 

  • 2 years in the position and 10 years in F&B at Ultra-luxury properties in cosmopolitan cities such as London, Madrid, Paris, New York, Middle East, Asia and LATAM.
  • Ability to lead, motivate and develop colleagues.
  • Be innovative, financially savvy, connect emotionally with guest and internal customer.
  • Be well versed in the Colleagues competencies of Kerzner International.
  • Excellent verbal and written communication skills, People Management Skills.
  • Must be able to speak, read, write and understand the primary language(s) used in the workplace.
  • Well verged with technology, which helps F&B to take next level.
  • University degree or Diploma in Hospitality Management.
  • Good understanding of multi-cultural environments.
