bout the Job
Under the guidance and direction of the Food & Beverage Division, and in full compliance with the policies and standards of One&Only Palmilla, the Private Dining Manager is responsible for ensuring that the Private Dining department operates at the highest levels of quality, service, and profitability, delivering an exceptional and personalized guest experience.
This role leads the overall Private Dining operation, overseeing the team, service processes, food and beverage quality, cost control, and guest satisfaction, while consistently upholding the brand’s luxury standards.

Key Responsibilities

Provide effective leadership and management of all aspects of the Private Dining department, ensuring optimal performance and service excellence.

Coordinate and supervise the preparation, set-up, presentation, and service of all food and beverage offerings, maintaining the highest quality, hygiene, and presentation standards.

Ensure the smooth and complete operation of food and beverage services within Private Dining.

Supervise the proper delivery, presentation, and control of all department amenities.

Lead recruitment-related activities including interviews, hiring, onboarding, training, coaching, and performance evaluations, in coordination with Food & Beverage leadership and Human Resources.

Monitor and analyze guest satisfaction results, implementing corrective actions and continuous improvement initiatives as needed.

Conduct regular inspections of mise en place areas, inventory levels, and storage standards.

Lead daily shift briefings (AM and PM) to align service standards, priorities, and team communication.

Address and resolve guest complaints, feedback, and inquiries related to Private Dining or the resort in a timely and professional manner.

Maintain high standards of cleanliness, organization, and order throughout all areas of the department.

Coordinate and foster strong working relationships with other departments to ensure a seamless and consistent guest experience.

Implement daily, weekly, and monthly controls to monitor departmental activities, tasks, and results.

Stay up to date with industry trends, innovation, technology, gastronomy, and best practices within luxury hospitality and food and beverage operations.

Prepare and submit the department’s payroll on a bi-weekly basis.

Ensure that all scheduled activities and responsibilities for supervisors, order takers, and servers are properly executed.

Conduct daily inspections of all physical areas to ensure proper presentation and maintenance, including lighting, furniture, trays, equipment, menus, floral arrangements, corridors, glass areas, and golf carts.

Follow up on any pending issues or incidents occurring during any operational shift.

Ensure menus and all materials related to in-room dining and Private Dining service are in proper condition and up to date.

Ensure accurate inventory levels in storage areas and oversee monthly inventory counts.

Maintain strict control over linen and any equipment shared with or provided by other departments.

Requirements

Minimum of 1-2 years of experience in a similar role within luxury hotels or resorts.

Strong knowledge of food and beverage operations, Private Dining, and In-Room Dining services.

Proven experience leading teams, managing costs, inventories, and service quality.

Solid understanding of food safety, hygiene, and quality standards.

Ability to work under pressure and with flexible schedules.

Fluency in English and Spanish (required).

Proficiency in hotel operating systems and administrative tools.
