Job Summary 

 

The Assistant Restaurant Manager's role is to plan, coordinate and control the day-to-day operations of all Food and Beverage Outlets within the Resort ensuring smooth and successful operations with the highest level of customer service and a favourable projection of the Resort’s superior image. Work with the Executive Chef/Food and Beverage Manager to establish service standards and service flow, making sure that all LQA standards are met.  To establish and oversee cost-effective buying procedures, management of employee shifts, and training and development in the areas of service and beverage service. 

 

Key Duties and Responsibilities 

  • Ensure the well-being of all guests whilst on duty and maintain the reputation of the resort through proactive thinking and actions.  Furthermore, investigate any shortcomings noticed or recorded and provide a report to the Restaurant Manager. 

  • Assist Restaurant manager to institute service methods, which are within the themes and ensure that all F&B services requested by guests are provided to the highest standards as laid down by the Restaurant. Monitor and control the service on the floor during the service periods and ensure that all appearances, services and the standards of the Resort’s dining area are to the required standards.  

  • Ensure sufficient stocks are available on a daily basis to efficiently run the outlet.  Control and monitor outlet stocks and conduct regular inventory of items. Recommend to the Restaurant Manager stock items requiring replacement due to breakage or excessive usage, which are in keeping with the themes of the Resort, and within the recommended budgets and management standards. Ensure that all stock control measures are maintained. 

  • Manage a team of staff ensuring that their performance is up to the required expectations. Also use your skills in training and development to raise the Colleagues standards and competencies to maximising the productivity of each individual member. Control and maintain the outlet roster in order to ensure that proper manpower resources are available to deliver the required service standards while keeping a strict control on overtime.   

  • Assist the restaurant manager to identify, initiate and recommend service improvements thereby increasing productivity within the unit and ensuring best possible service to guests. 

  • Implement, monitor and ensure compliance of all safety and hygiene procedures set in co-ordination with the Restaurant Manager thereby enhancing the reputation of the Resort as a leading hotel. 

  • Along with the Restaurant Manager be responsible for the budgets and control all financial aspects of the operations through cost-effective and efficient running methods.  Ensure that operational expenses are minimised and that resources are creatively and effectively utilised to maintain favourable cost/revenue ratios.  

  • Based on dietary requirements of guests, provide them with optional diet specific menu’s e.g. low calorie, low cholesterol, low sodium, lactose free etc.  

  • To be able to liaise with the sales & marketing team, organisers and delegates to ensure all requirements are met. This will include meeting potential clients on site trips prior to events. Post event follow up will be required to ensure satisfaction and potential future business. 

  • Inspect storage areas for organization, use of FIFO, and cleanliness.  

  • Ensure understanding, compliance and leading by example in accordance to the One & Only Core Values and Competencies. 

  • Perform additional duties as requested by the Restaurant Manager/Food and Beverage Manager. 

  • Maintain a positive work atmosphere by acting and communicating in a manner that enables getting along with guests, vendors, co-workers, and management. 

  • Takes full responsibility of the outlet in the absence of the Restaurant Manager/Food and Beverage Manager.
