Job Summary

    Plan, co-ordinate and control the day to day operations of all Food and Beverage Outlets within the Resort ensuring smooth and successful operations with the highest level of customer service and a favourable projection of the Resort’s superior image.

    Work with the Executive Chef/Food and Beverage Manager to establish service standards and service flow, ensuring all staff consistently meet minimum Leading Quality Assurance standards at each interaction.

    To establish and oversee cost effective standards, management of employee shifts, and training and development in the area of food and beverage service. 

 

Key Duties and Responsibilities

    Ensure the wellbeing of all guests whilst on duty and maintain the reputation of the resort through proactive thinking and actions.  Furthermore investigate any short comings noticed or recorded and provide a report to the Food & Beverage Manager.

    Be aware of food allergies and understand all ingredients in food and beverages served at resort. Ability to recommend items that suit the specific dietary requirements of guests.

    Assist Food & Beverage Manager to establish service methods, which are within theme of restaurant. Ensure that all Food & Beverage services requested by guests are provided to the highest standards. Monitor and control the service on the floor during the service periods and ensure a consistent, professional appearance.

    Ensure sufficient stocks are available on a daily basis and maintain a par-level of stock to efficiently run the outlet. Control and monitor outlet stock and conduct regular inventory of items. Recommend to the Food & Beverage Manager stock items requiring replacement due to breakage or excessive usage, keeping with the theme of the Resort, and within budget. Ensure that all stock control measures are maintained.

    Train and develop staff to meet required standards and competencies. Maximise the productivity of each individual colleague through monitoring work performance and rectification if required. Control and adjust the outlet roster in line with business level to prevent accrual of overtime.

    Assist the Restaurant Manager/Food & Beverage Manager to identify service improvements, thereby increasing productivity within the unit and ensuring best possible service to guests.

    Ensure department is consistently compliant with all safety and hygiene procedures set by Food & Beverage Manager.

    Assist the Food & Beverage Manager to develop and maintain budgets. Ensure that operational expenses are minimised and that resources are creatively and effectively utilised to maintain favourable cost/revenue ratios.

    Inspect storage areas for organization, use of FIFO, and cleanliness.

    Ensure understanding, compliance and leading by example in accordance to the One & Only Core Values and Competencies.

    Perform additional duties as requested by the Restaurant Manager/Food and Beverage Manager.

    Maintain a positive work atmosphere by acting and communicating in a manner that enables getting along with guests, vendors, co-workers, and management. 

 

Knowledge & skills

    Achieved tertiary qualifications in Hospitality from a recognised institute in Hotel Management.

    Professional experience with minimum of 4 years running an exclusive food and beverage outlet, and experience in implementing procedures and training staff.

    Proven ability and experience in motivate, mentor and manage a small team.

    Specialised knowledge of beverage and beverage procedures, as well as methods used in the management of an F&B outlet, and the production and control thereof.
