About the Role


To support the General Manager with managing all the Food & Beverage operations and ensures that best practices are being followed and implemented consistent with company SOP and policies & procedures.


Key Duties and Responsibilities


  • Achievement of budgeted food sales, beverage sales, labor costs through effective rostering & colleague cross utilization and profitability.
  • Responsible for the department incentive programs and ensuring targets are met.
  • Assist in preparing/consolidating the yearly budget for the department and in preparing the monthly P&L analyses for each outlet and the department, attend the monthly ISO & KPI tool performance meeting with the Directors.
  • Ensuring action plans are being followed and addressing reoccurring issues.
  • Monitor and constantly improve quality and guest satisfaction with the given tools (LQA, IFH Mystery Shopper, JD Power, Tripadvisor, Lobster Ink). Develop and maintain corresponding departmental control procedures.
  • Ensure all health and safety regulations are strictly established and adhered to.
  • Assist the Food and Beverage team in handling guest complaints.
  • Completed menu engineering as per SOPs.
  • Ensure that all operating systems are well maintained and audited quarterly (Symphony, SOP’s, restaurant reservations system)
  • Be updated with the local and global food and beverage market trends.
  • Maintains a high standard of appearance and grooming, as per SIRO standard.
  • Ensure 100% compliance with all mandatory training for departments; as well as the Departmental Trainers positively encouraged
  • Conduct interviews for all Supervisory positions
  • Review manning and re-recruitment of F&B positions
  • Ensure vacation, PH and lieu days are used to the needs of the business
  • Review the payroll figures and challenge the HOD’s with regards to overspending and casual usage
  • Ensure that the payroll is submitted to Finance/HR on the agreed date
  • Train and develop the team and provide support when required


Skills, Experience & Educational Requirements


  • 5 years plus experience in Food and Beverage Management.
  • Global luxury hotel background
  • Proven experience leading multiple restaurants and creating new food and beverage concepts
  • International experience preferred
  • Outgoing, confident, excellent communication skills with the right attitude, whose flexible and a great team player who works well under pressure analytical thinking, sincere and dependable
  • Dynamic, energetic, creative individual with a positive “can do” attitude
  • Committed and passionate about F&B
  • Good acumen on new worldwide market trends
