2.   Job Details & Requirements

Job Summary

Under the guidance and supervision of Steward Supervisor, the Steward is an active leader responsible for the day-to-day operation within SIRO Boka Place Area, following established policies and procedures. He/She is responsible for good hygiene practices including but not limited to dish washing, pot washing, waste management, and all BOH sanitizing duties falling under the HACCP requirement. He/She is excellent at communicating & reporting issues and can propose alternative solutions with a professional expertise. 

Key Duties and Responsibilities

  • To ensure that all operating equipment is stored, cleaned, shelved and used adequately, avoiding any breakage.  
  • To ensure that all machinery is maintained regularly continually operational.  
  • To ensure that the outlet is supplied with clean operating equipment.  
  • To ensure that food production areas are supplied with clean kitchen utensils.  
  • Ensure the kitchen is clean, well maintained and organized at all times.  
  • Ensure floors are dry and clean at all times.  
  • Operate pot-washing machinery and maintain a hygienic working environment in accordance with hygiene regulations and company standards.  
  • Adhere to all sanitation guidelines.  
  • Dispose of waste as per the hotel and authority standards and Adhere to recycling guidelines.  
  • Ensure the waste bin area is kept clean and tidy.  
  • Cleans and sanitizes pots, pans, utensils, and other minor equipment routinely used in the kitchen following established procedures.  
  • Cleans and maintains floors and walls in kitchen and dish washing area by following standard procedures.  
  • Consistently adheres to SDS (SafetyData Sheet) information related to the proper and safe use of chemicals in the workplace.  
  • Knowledge and proficiency in operating industrial dish washers.  
  • Ensure all equipment is clean and in good working order.  
  • Wash, Sort, stack dishes, and load/unload dishwasher  
  • Wash, Sort, stack and store all cleaned items in an organized and safe manner.  
  • If any breakages or chipped items found, then remove them from circulation and update on daily outlet breakage reports.  
  • Uses and maintains all equipment according to manufacturer and department guidelines.  
  • Always maintain a clean and safe work environment  
  • Be aware of cybercrime and common scams as communicated by the Kerzner Global IT team, filter and detect these attempts, and ensure that guest and company safety is protected.
  • Other duties as assigned. 

 

 

3.   SKILLS, EDUCATION & EXPERIENCE & REQUIREMENTS  

 

  • Secondary School Certificate   
  • Preferably apprentice ship   
  • One year experience in a similar position in 4/5 star hotel.  
  • Ability to work and communicate in a multinational environment with workable oral and written English  
  • Able to work in a busy environment.  
  • Can lift up 30kg loads, can push and pull heavy trolleys.    
  • Ability to manage large, multicultural teams.  
  • Speak 2 languages at least.
